Pen pressure helps extend, and spread the strokes so it doesn't do that. What she means by “fixing every frame” is probably because sometimes when you're finished animating each frame, (a frame is a part of your animation, a movement you draw, it's sort of hard to describe unless you see it in front of you) and when you come back to color it, it often fills up the whole entire space instead of what you are wanting to fill in. Using the offline editor is a better choice honestly, and you can always download the offline version on here. I use a Wacom Intuos drawing tablet and could make awesome animations like this on the Scratch online editor: (this was animated on FireAlpaca) but can't really because of the excessive amount of lag I get when drawing online. It's not just you who is experiencing the problem with tablet use on Scratch being laggy.
